Yes all hail pret, because those legends have released their infamous vegan cookie recipe and I could cry with joy. They posted the recipe recently on their instagram, along with lots of their other classics. To be honest with you, I’ve found these cookies a bit tricky to make. But I think it might be because I’ve not been using scales to measure out the ingredients. So you know, 3rd time’s a charm and all that.
If you’re a simple baker, or just want something quick, easy and no fuss, then I present one of my favourites. I found this by simply googling ‘easy vegan cookies’ and I think it’s one of the first recipes I’d tried for vegan cookies. But I love it, and I keep going back to it. It’s another blogger called Loving it Vegan, and her chocolate cookies follow a very simple and standard recipe.
If you’re after that classic giant american gooey cookie, then this is the boy for you. These cookies take a little extra prep as you need to freeze them for half an hour first, but oh boy are they worth it. I’ve lost count of the amount of times I’ve made these, but they really are the most perfect cookie ever. Anna shared the recipe in one her YouTube videos – which also has a great vegan recipe for a beef stew. The cookie recipe does call for sweetened applesauce which I struggled to find, but it still works without it or if you use a jar of bramley applesauce.
